Experience-

I’ve been working in the back of the house for 11 years and I was most recently the Executive Sous Chef for Joule Restaurant in Seattle (an Asian fusion steakhouse that focused on small plates). My responsibilities included menu development, working with vendors and other service providers for better prices and more advantageous benefits for our restaurants, scheduling, hiring/training, recording recipes for my cooks and food-cost/inventory practices. I have experience with tasting menus, buyout functions and expediting/cooking through busy services. Personally, I like spice and bold flavors and am comfortable combining ingredients from asian traditions into western food harmoniously. I am confident in my ability to pick up any new recipe quickly.

I prefer to lead by example and do not want to ask my cooks to do anything that I am not willing to do myself. I believe that good communication between the front and back of the house leads to a smooth service and a better working environment.
